Udon Noodle from Sanuki Region in Japan.
Made out of mixed flour, salt and water. Fat free, healthy and filling, so easy to make and you will be surprised how tasty they are, the secret is the sauce !

Simple to make :
Boil some water in a sucepan (water 1L for 100g noodle) once it boils add noodles slowly to maintain boiling then boil for 9-12 minutes. Drain and wash the noodles in cold water. Meanwhile pour some Soba senka sauce in the empty saucepan then add the clean noodles, you may need to add more sauce , the noodles just want to be covered. Heat the noodles again then serve hot !
For cold noodles, do the same but miss out heating the sauce at the end.

Very fine wheat flour noodles, served cold in summer for that refreshing taste.

Very poplular in our home town of Shizuoka, these noodles have a great hint of green tea.

You can use for hot or cold noodles, in summer cold noodles are very popular. You dip the noodles into the sauce, (you can add more soya sauce if required) The taste is not hot or spicy more meaty. (330ml)
